Quick Chilled
Fresh Tomato Cream Soup

Peel, seed and chop coarsely into a blender:

  • 2 1/2 cups fresh ripe tomatoes

Blend briefly with:

  • 1 cup cream
  • 1 tablespoon parsley
  • 1 tablespoon basil
  • Season to taste

Chill and serve.

Yield: about 3 cups
